
We’ve been eating Maine lobster rolls since before most travel writers discovered Maine had a food scene. Maine vs Connecticut Style
Maine style — cold chilled lobster meat tossed lightly in mayonnaise, salt, and sometimes lemon, in a toasted split-top hot dog bun. The mayo should be present but not dominant. Connecticut style — warm lobster meat dressed with drawn butter rather than mayo. More decadent and rich. Less common in Maine but available at the better lobster restaurants. Both are correct — order based on weather and mood.
What Makes a Great Lobster Roll
The lobster: Fresh, not frozen. Maine lobster. Claw and knuckle meat is sweeter and more tender than tail. Too much filler (celery, onion, excessive mayo) is a sign of stretching the lobster. The quantity: A proper Maine lobster roll contains the meat of approximately one whole lobster — roughly 3-4 ounces of picked meat. The bun: A split-top hot dog bun, toasted in butter on the flat sides. Not brioche, not ciabatta. The setting: Eating at a picnic table overlooking a working harbor is meaningfully better than eating indoors.

How Much Should a Lobster Roll Cost?
A proper Maine lobster roll with a generous portion typically costs $25-40 at a quality establishment in a tourist area. Prices fluctuate with the lobster catch. Working lobster pounds (Thurston’s, Harraseeket, McLoons) typically offer better value than restaurant-markup operations. Prices significantly below $25 should raise questions about portion or quality.
The Lobster Roll vs The Whole Lobster
A whole steamed lobster — cracked at the table with drawn butter — is a different and arguably more authentic Maine experience. If you’ve never eaten a whole Maine lobster, do it at least once. Thurston’s, Harraseeket, and McLoons are all excellent whole lobster destinations in addition to their rolls.
